So this recipe doesn’t exactly pass my health food test, but there are some aspects of it that is healthy, like the almonds. And egg whites. This is a special snack I like to make that can:
1} Incorporate the help of children.
2} Replace buying junk food when going on a field trip
3}And make the house smell incredibly good.
6 cups unsalted almonds
2 egg whites
2 tsp. vanilla
1 cup brown sugar
1 cup organic sugar or turbinado
3 Tbsp. Cinnamon
1/4 tsp. salt
Begin by beating two egg whites with the vanilla. Stir in the almonds real good.
In a separate bowl, mix the rest of the ingredients together.
Next, spray your crock pot with olive oil and dump in the almonds, pouring the sugar mixture on top. Stir. Stir. Stir.
Set the crock pot to low. We put our almonds in at 7:45 am and they were done by noon. They need to be stirred occasionally, a perfect task for a wiggly homeschooled child. When they are done, spread them on parchment paper or wax paper to cool.
When they are cooled off and deliciously crunchy eat some and then store the rest in an air tight container.
I made these on the day we were going to the Science Museum. We don’t normally eat a snack in the evening but being as we were going to be up late I figured the kids were going to need a little something extra. A sweet, nourishing treat that makes their souls and mouths happy.
